The problem was that I was using "datatype" instead of "datatypeWithEnum" in the model.mustache file.
When you have a the following model property:

Then we were generating:

rather than:
myInlineStringEnum = try container.decodeIfPresent(MyInlineStringEnum.self, forKey: "myInlineStringEnum")
